How can I use it to inform future service provision?

Equalities monitoring information is just one way of ensuring that your organisation meets the needs of equalities groups.  Once you have analysed the information, you will have an idea of where there may be barriers to accessing services, or achieving desired outcomes. 

But the monitoring information itself will not normally be enough.  Generally, you will have to identify areas of disadvantage or potential inequality, and do some more work to find out why these are occurring and how they could be addressed.  

In this way, monitoring information is part of a much wider strategy on equality within your organisation.
